Roasted Herb Potatoes with Burrata

What happens when you team up herb-roasted potatoes with creamy-as-can-be burrata? The answer is simple… you end up with a side dish that’s nothing short of spectacular.
What You'll Need
- 1 (18-ounce) bag frozen roasting red potatoes with onions
- 3 tablespoons olive oil, plus extra for drizzling
- 3 cloves garlic, minced
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon coarsely chopped fresh dill
- 1 tablespoon coarsely chopped fresh basil
- 1 tablespoon chopped fresh chives
- 2 balls burrata cheese
What to Do
- Preheat the oven to 425 degrees F. Coat a rimmed baking sheet with cooking spray. In a medium bowl, combine potatoes, 3 tablespoons oil, garlic, salt, and pepper; toss until evenly coated. Place on baking sheet in a single layer.
- Roast for 20 minutes, toss, and continue to roast for 15 to 20 minutes more or until golden. Place potatoes on a serving platter, sprinkle with dill, basil, and chives. Break the cheese over the potatoes and drizzle lightly with oil. Serve immediately.
