    Imagine you're sitting on a beach chair, staring out into the clear blue waters when, all of a sudden, you're handed creamy, Coconut Pudding, garnished with a bright red cherry on top... Luckily, we've got half the recipe for your tropical daydream right here!

    What You'll Need

    • 3/4 cup sugar
    • 4 tablespoons cornstarch
    • 1/8 teaspoon salt
    • 2 cups milk
    • 1 cup heavy cream
    • 3 eggs
    • 1 teaspoon vanilla extract
    • 1 1/4 cup shredded coconut

    What to Do

    1. In a medium saucepan, combine sugar, cornstarch, and salt. In a large bowl, whisk milk, heavy cream, and eggs; gradually stir into saucepan.
    2. Cook over medium heat 10 to 12 minutes, or until mixture thickens and is bubbling, whisking constantly. Remove from heat and stir in vanilla and coconut. Spoon into individual serving dishes or 1 large bowl.
    3. Cover with plastic wrap directly on surface of pudding, and refrigerate 4 hours, or until firm.

    Notes

    Garnish with toasted coconut and a maraschino cherry.

    It tasted good, but although I explicitly followed the directions---it did not firm up enough-and I am wondering why? Can milk or whipping cream be reduced a bit.

    Hi there! We're so glad you enjoyed the taste! The Test Kitchen did some thinking on why it may not have thickened up like it should have. If your cornstarch is a bit on the older side you might need to add another tablespoon. Also, make sure to use whole milk. Lower fat milks may not let it thicken up as much as it should. We hope that helps!

    I love pudding as a sweet, quick, no-fuss dessert. I've never had coconut pudding before, though. Yummy!
