Made with family-favorite potato tots, lots of cheese, bacon, ranch mix, and chicken, this casserole has it all. Plus, it's made in your slow cooker, so there's hardly any work involved!

What You'll Need

  • 1 (32-ounce) package frozen potato tots
  • 1 1/2 cup grated cheddar cheese
  • 1 1/2 cup grated Monterey Pepper Jack cheese
  • 1 (2.8-ounce) package real bacon pieces
  • 1 (1-ounce) package ranch dressing mix
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 boneless, skinless chicken breasts
  • 3/4 cup milk

Chicken (Bacon) Ranch Casserole Recipe

  1. Coat the bottom of a 6-quart slow cooker with cooking spray. Place half the potato tots on bottom.
  2. In a medium bowl, combine cheeses; mix well. Sprinkle half the cheese mixture over potato tots. Sprinkle half the bacon pieces over cheese.
  3. In a shallow dish, combine ranch dressing mix with salt and pepper. Coat chicken in ranch mixture and place over bacon pieces. Sprinkle any remaining ranch mixture over chicken.
  4. Top with remaining potato tots, cheese mixture, and bacon. Pour milk over top.
  5. Cover and cook the Chicken Ranch Casserole on LOW 4 to 4-1/2 hours or until chicken is no longer pink in center. Serve the chicken breast topped with tater tots, cheese, and bacon.

Can this be converted for the oven - not crockpot? I absolutely dislike crock pot cooking.

Hi! Yes this recipe can be cooked in oven instead of crock pot. Follow recipe instructions and instead of crock pot place in a 9x13 baking dish. DO NOT pour milk over ingredients. In oven version milk is not needed. Bake at 350 degrees for 30 to 40 minutes or until chicken is no longer pink inside and recipe is heated through. Hope this helps!

How about the peas and carrots? Can they be made in the crock pot too at the same time?

Hi there! The peas and carrots would get too mushy if put in at same time. You could be put in slow cooker last 30 minutes of cooking or heated in microwave when chicken casserole is done. Hope this helps!

My family loved this! The potato tots come out as a "hash", but it is so delicious, it doesn't matter. The best part is all you do is toss everything in the croc pot. I have made this many times. I would recommend this!

Re Jonboy's comment about baking for over 4 hrs. I hope you had your oven checked for the right temperature!!! Could be yours is way ff. Mine once was and got it fixed. It was the thermostat in the dial that sets temperature.

Should cook this on high not low like it says. I cooked it for 4 1/2 hours on low and the chicken is still raw. There goes my dinner for tonight.

Have your thermostat checked. I had that problem with things taking too long and my problem was the knob that sets the degrees wasn't working properly. It was loose. Simple to fix. It is your oven, no the recipe.

Haven't tried this but will this week. I am MSG sensitive so ranch dressing mix is out. I used to make my own but delighted to find McCormick's now has a ranch seasoning that is MSG free. sharing for anyone like me.

I doubled everything but the chicken and the seasoning. It just fit into my 8 qt pot. I cooked it longer, thinking it would need it because there was more. But the potatos came out like hash browns. LOL! Was ok though. Everyone loved it. Expensive to make.

I changed one thing..the milk. I wanted a spicier buffalo chicken taste so I used 1/4 cup Hot wing sauce and 1/2 cup milk. Next time I might switch tose to make it more spicy. We like hot foods here.

I'd asked earlier about whether to leave the tater tots frozen or not - I left them frozen, and the dish came out great!

I'd never thought of calling something that comes out of a slow cooker a "casserole," but I guess this counts!! Yummy!

Do you have to thaw the frozen tater tots before making this?

I like to know this also. I think that you most likely leave them frozen so they don't get too mushy.
