Our Hoppin' John Stew is our take on a traditional Southern dish made from black-eyed peas. It's loaded with hearty ingredients like smoked sausage, black-eyed peas, and rice for a down-South flavor combination you'll want to eat all the time!
What You'll Need
- 4 (15.8-ounce) cans black-eyed peas, undrained
- 2 (14-1/2-ounce) cans diced tomatoes with celery, onion, and green bell pepper, undrained
- 1 (4.5-ounce) can chopped green chilies
- 1 (10-1/2-ounce) can condensed beef broth, undiluted
- 2 cups water
- 1 pound smoked sausage, sliced
- 1 teaspoon garlic powder
- 1/4 teaspoon pepper
- 1 cup uncooked long-grain rice
- 1/4 cup bacon bits
What to Do
- Combine all ingredients in a 5- or 6-quart slow cooker.
- Cover and cook on LOW setting 8 hours.

Not generally a fan of black eyed peas, so this recipe was a wonderful surprise! I wasn't sure of the cook time since it says 6 hours at the top and 8 hours in the instructions split the difference and did 7 hours. Turned out great. I substituted the spices and just used the flavor packets that came with the rice blend of long grain and wild rice. Will definitely make this again.

I know it might sound strange, but I like to serve this hoppin' john recipe for breakfast! It is stick - to - your - ribs filling and has a ton of protein to help you get through a busy day. Since you do not drain the black - eyed peas first, I like to use a reduced sodium variety, so I can have a little more control over the saltiness.

An easy Hoppin John recipe for New Years. So much easier then traditional recipes and just as good of flavor. Loved having leftovers next day. Tasted just as good then.
