No need to skip breakfast with this quick and easy recipe for Coffee Cup Scramble. It cooks up fast in the microwave for a healthy way to start your day.
What You'll Need
- 2 eggs
- 2 tablespoons milk
- 2 tablespoons shredded Cheddar cheese
- Salt and pepper to taste
What to Do
- Coat a 12-ounce microwave-safe coffee mug with cooking spray. Add eggs and milk; beat until blended.
- Microwave 45 seconds at high power; stir. Microwave 30 to 45 seconds more, or until eggs are almost set (see Note).
- Top with cheese, season with salt and pepper, and serve.
Note
Since microwave ovens vary, you may need to adjust the cooking time.

There are quite a few eggs - in - a - mug recipes out there, and they are all pretty much the same but with different veggie or cheese add - ins. If you have some leftover cooked broccoli, potatoes, spinach, or even mushrooms, they all work well using this method. My husband was skeptical at first when I told him how to do this, but now he makes this for himself quite often.

This sounds so quick and easy! I'm often rushed in the morning and end up skipping breakfast, but this sounds like an awesome solution!

I make this all the time now. I love it! My kids are divided on this one. I love putting a little salsa on top, it's delicious. I can't wait to try this with all kinds of fresh veggies thrown in, cut into small pieces. The first few times I made it, I used heavy cream instead of milk, because I had an open cream that needed to go. It was fluffier that way I think. But it's delicious either way.

This is the "only" way I scramble an egg now for my youngest son before school. I prepare the cup with egg and milk and wait for him to tell me he is ready to eat (Junior) then I put it in the microwave and push his toast down in the toaster. He loves it this way and it is so simple. I have been doing it this way for about a year now. Did not believe it at first that it would be as good as it is.....but he loves it

Wow... I just made this. Who knew that breakfast could be this easy! I added diced deli ham, onion powder, and the salt & pepper in the initial mix. Then I microwaved. I have seen several recipes like this and I have always wanted to try them. I am glad that I tried this one because I really enjoyed the fluffy flavor. I will be making this often!

You can place eggs and milk in a small plastic container and whisk them and place cheese in a small baggie and take to work to microwave there.

Another idea that is awesome is just spray the mug, drop in an egg, stir just a little then cook in microwave and it will slide out of the mug in a perfect circle then place on a lightly buttered english muffin, place a piece of cheese on top the egg then top of the muffin and wrap in paper towel and back in for a few seconds to melt the cheese. Perfect Egg McMuffin.

this is a great recipe - great source of protein and great when u dont want to get the fry pan out - less to clean up afterwards.

I have used the same recipe, using Egg Beaters. But, I never put any thing else in it. I must try it soon. Maybe for lunch, today!!

I just made this. It is a great way to make a quick breakfast without the mess! The eggs came out great and I added a little bacon bits and a slice of cheese to mix in. No added salt, the bacon and cheese added enough. Very tasty. Will make again. Mine cooked in 45/30/30.

Wait! The best part(s) are left out- You can put a handful of 'real' bacon-ohs' or diced fine ham pieces in the egg(s) prior to waving them. As most cheese has plenty of salt in, you may want to experiment with adding "no" salt.
