Spinach Pizza

They'll never believe it when you say you made this on the grill, so make sure you have a helper to witness that this "OOH it's so GOOD!!" came right off the grill!
What You'll Need
- 1 (12- or 14-inch) ready-made pizza crust
- 1/2 teaspoon vegetable oil
- 1 tablespoon Italian seasoning
- 1/4 cup grated Parmesan cheese
- 1 package (10 ounces) frozen chopped spinach, thawed and drained well
- 1 cup (4 ounces) shredded mozzarella cheese
What to Do
- Wrap a 12" or 14" pizza pan in aluminum foil. Place the pizza shell on the foiled pan and rub oil on top of the crust. Sprinkle the crust with the Italian seasoning and Parmesan cheese.
- In a small bowl, combine the spinach and mozzarella cheese, then sprinkle evenly over the pizza crust. Place the pan on the grill and close the cover. Grill the pizza for 10 to 12 minutes, until the cheese is melted and the crust begins to crisp.
Notes
Add other pizza toppings if you want, like black olives, onion slices, and chopped tomatoes. And for a fresh garden taste, try using 2 cups of fresh spinach instead of frozen spinach.
