Pepperoni Chicken Rolls

Your family is going to love these Pepperoni Chicken Rolls! They're basically rolled-up chicken breasts that are stuffed with lots of cheese and tasty pepperoni. We hope you're ready to make this often, 'cause once they try them, they're going to ask for them over and over again.
What You'll Need
- 2 (8-ounce) boneless, skinless chicken breasts
- 2 tablespoons grated Parmesan cheese
- 1/2 teaspoon dried oregano
- 16 slices pepperoni
- 1 cup shredded mozzarella cheese, divided
- 1/4 cup Italian bread crumbs
- Cooking spray
- 1/2 cup pizza sauce
What to Do
- Preheat oven to 425 degrees F. Coat a baking sheet with cooking spray.
- Cut each chicken breast in half horizontally and lightly pound to 1/4-inch thickness. Sprinkle chicken evenly with Parmesan cheese and oregano. Top chicken evenly with pepperoni and half of mozzarella cheese, then roll-up in jelly-roll fashion.
- Place bread crumbs in a shallow dish and coat chicken evenly on all sides. Place seam-side down on baking sheet. Lightly spray with cooking spray.
- Bake 15 minutes. Remove chicken from oven and top evenly with pizza sauce and remaining mozzarella cheese. Bake 5 to 8 more minutes or until chicken is no longer pink in center. Serve immediately.

I really loved this. I used Italian seasoning instead of oregano and Italian seasoned bread crumbs. I also dipped my chicken rolls in a beaten egg before I coated them with the crumbs. I think it makes the crumbs stay on better. Really delicious the next day as well.

This is kind of like chicken parmigiana and pepperoni pizza all rolled into one! A great way to make chicken a little less boring, this is a recipe that I'm sure my whole family will go nuts over. Serve these with some garlic bread and a mixed greens salad and you have a complete meal that will satisfy.

I made this exactly as written. I told our granddaughter I had a new recipe to try, so she brought the boyfriend. Hubby and the "kids" all really liked it a lot. It was okay in my opinion only because pepperoni is one food I don't care for. However, having made this as written, I will make it with other Italian meats I do like. I rated this based on the unbiased opinions, not mine.

Great idea I stuffed my flattened chicken breasts with cheese and pepperoni then rolled them up dipped them in Italian dressing then parm cheese mixed with bread crumbs garlic powder and oregano salt pepper to taste then browned them in olive oil and butter put in sprayed panbaked 400 degrees 18 minutes took out covered with sauce and shredded cheese and slipped back in baked another 8 minutes DELICIOUS will make often!
