Tart and creamy, our easy-as-pie recipe for Key Lime Pie will have everyone asking you which bakery you picked it up at. They'll be green with envy when you tell them it was your very own homemade!
What You'll Need
- 1 (14-ounce) can sweetened condensed milk
- 1 tablespoon grated lime rind
- 2 egg yolks, slightly beaten
- 1/2 cup lime juice
- 1 (9-inch) prepared graham cracker pie crust
What to Do

In a large bowl, mix together sweetened condensed milk, lime rind, and egg yolks. Stir in lime juice and continue stirring until mixture has thickened.

Pour into pie crust and chill for 3 hours before serving.
Notes
You can serve this Key Lime Pie plain or topped with whipped cream, or you can garnish it with extra grated lime rind. And in case you were wondering, no baking is needed because the thickening of the filling is a result of the reaction of the milk with the lime juice. As with any dish containing raw eggs, be sure to store this in the refrigerator.

Have made this pie for years with lemon juice. I think the acid in the lemon (or lime) juice cooks the eggs. Still needs to be kept in the fridge.

It's surprising, but true. Key Lime pies are NOT green. The meat of the lime is not green just the peel. I lived in South Florida for some time and had Key Lime pie in the Florida Keys. They were NEVER green.

Not generally attracted to sweets or pies in general after the 1st piece, until I found Key Lime Pie! - Key Lime is an outstanding recipe. - More substantial than Lemon w/o being too tart or too sweet.

I use 3 egg yolks and save the egg whites for a merainge with 1/3 cup of sugar & 1/4 tesp. of cream of tartar, beat until fluffy.. Place in oven to brown. I also cook the pie for 15 to 20 before adding the topping.. I feel better cooking the eggs for a little bit.

I see your note about NOT adding green coloring....so this is actually LIME pie, and not KEY Lime pie....use (lg. green) lime juice, not juice from the small yellow limes ? Sounds delicious !
