Refrigerator Blueberry Pie

You know those desserts that are so good that you HAVE to share 'em? Well, here's one for ya! This Refrigerator Blueberry Pie is D-E-L-I-C-I-O-U-S for you and those around your table!
What You'll Need
- 4 cups fresh blueberries, divided
- 1 cup sugar
- 3/4 cup hot water
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 2 tablespoons lemon juice
- 1 baked 9-inch pie crust
- Sweetened whipped cream
What to Do
- Combine 1 cup blueberries, the sugar, and next 4 ingredients in a saucepan. Cook over medium-high heat until mixture thickens, stirring constantly.
- Add remaining 3 cups blueberries and the lemon juice; stir gently. Spoon into pie crust; cover and chill 1 hour or until set. Serve pie with sweetened whipped cream.

Sounds delicious! Will make it soon. How much Stevia shold i use to replace the sugar? Also to answer another person's about replacing cornstrarch, I always used, as my mother did, minute tapicoa istead of cornstarch for all fruit pies. It does not taste like tapicoa and is clear. The graham cracker crust soulds ike a great idea as well.

Hi Brenda! 1 cup of sugar would be equivalent to 24 packets of Stevia. Enjoy!

It's a refrigerator Blueberry Pie. The directions calls for 1 baked pie crust. Hope this helps.
