Crispy Potato Wedges with California Dip

What You'll Need
- 3 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 large potatoes, cut lengthwise into 1/2-inch wedges
- AVOCADO DIP
- 1 avocado, pitted and peeled
- 1/2 cup sour cream
- 2 tablespoons mayonnaise
- 2 tablespoons chopped fresh cilantro
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 tablespoon lime juice
What to Do
- Preheat oven to 425 degrees F. Coat baking sheets with cooking spray.
- In a large bowl, combine oil, paprika, chili powder, salt, and pepper; mix well. Add potato wedges and toss until evenly coated. Place potatoes in a single layer on baking sheets.
- Bake 45 to 50 minutes, or until golden brown, turning once halfway through cooking.
- Meanwhile, in a medium bowl, mash avocado. Stir in remaining ingredients. Serve potato wedges with avocado dip.

I love to serve these potato wedges alongside a nice juicy steak or with barbequed chicken! They are so much healthier than French fries, and take very little time to prepare. The smoked paprika gives them a great smoky flavor without being too spicy or salty, and they turn out nice and crispy every time!

I love this recipe as an alternative to french fries. The crispy potatoes wedges have a great seasoning with the right amount of zip and are baked instead of fried. The avocado dip is better than any dip sold in the store. We're having this again with bratwurst on the grill this weekend.

I really loved everything about this. The avocado dip is so creamy and flavorful - I could've eaten it off my fingers. The potato wedges were perfectly cooked; crispy on the outside and tender on the inside. Plus, the seasoning is great! I'll be making this the next time I have some friends over.
