Saltine crackers make a dandy crunchy coating for these homemade fish sticks. Serve 'em with tartar sauce for dipping, and you'll have a dinnertime winner every time.
What You'll Need
- 1 (1-pound) grouper
- 2 large eggs, lightly beaten
- 18 saltines, crushed
- Canola oil
- 1/4 teaspoon salt
What to Do
- Cut fish into 5-inch by 1-1/2-inch strips. Dip in egg, and dredge in saltine cracker crumbs.
- Pour oil to a depth of 1-1/2 inches into a heavy skillet; heat oil to 375 degrees. Fry fish, in batches, 2 minutes on each side. Drain on paper towels, and sprinkle with salt.
